Job Description

The Executive Chef position is responsible for all food operations in the resort, which currently consists of 3 restaurants, 24-hour room service and functions for groups and events. 
 
Responsibilities include:
  • Oversee service standards in all food and beverage outlets to ensure guest expectations are consistently exceeded;
  • Recruit, train and manage a large team;
  • Defines and introduces rules and standards in the kitchen.Performs innovation recipes. Control of sanitary booklets;
  • Manage operating inventory;
  • Responsible for the work in the kitchen and organize and manage the kitchen, preparing the schedule of tasks and duties;
  • Control the quality and quantity of goods received. Plans meals, ordering food and prepares menus, responsible for quality and taste;
  • Oversees all phases of cooking, including portioning, serving and decorating. Preparing special meals and participate in the preparation of daily meals. Manager helps food and beverage and sales staff in the organization of banquets, parties and other special events. Introduces health and sanitary standards and ensures that they follow. Keeps track of spent material and achieved turnover cuisine;
  • Promote the desired work culture around the core values of Integrity, Respect, Teamwork, Passion, Authenticity and Responsibility as well as embracing the brand ethos of Aman;
  • Plan and implement departmental budget;
  • Work closely with other managers to further differentiate Aman at the pinnacle of the luxury lifestyle, and constantly review and refine every aspect of what an Aman property offers to our guests;
  • Implement the company’s food concepts as directed;
  • Overseeing all aspects of the guests’ food experience;
  • Performs other tasks as requested by the General Manager;
  • Reports to the General Manager.
This position requires:
  • At least 5 years international experience working in high class hotels and at least 3 years at the position of Executive Chefin a 5-star operation;
  • Fluency in business English is mandatory.  Other language capabilities are desirable, but not essential;
  • Highly organized with strong communication skills;
  • Hard working and high energy levels.
