Job Description: Executive Chef
Department: Kitchen, Level 1
Reporting directly: General Manager

We are looking for a well-organized, passionate, dynamic and creative Executive Chef to join the Lazure Hotel & Marina team in Herceg Novi, Montenegro managed by Sophos Hotels SA. The Executive is responsible for the efficient operations of the Kitchen Department of the hotel. He/She collaborates with the Food & Beverage Manager to ensure that guests receive always the highest level of food service as according to company policies and standards. 


As the Executive Chef you will be responsible for the smooth operation of the entire kitchen operations, food production and all other related sections.
  • Responsible for the timely kitchen preparations for all meal services in the outlets and banquet activities in line with the stipulated opening hours
  • Provide creative culinary ideas to food activities
  • Ensure that the Kitchen team is well motivated
  • Represent the Kitchen Department on the hotel's Management
  • Ensure proper staffing and scheduling in accordance to productivity guidelines
  • Ensure and implement the regulations of the highest food hygiene standards
  • Establish an integrated cost management plan through product lining, minimal inventories, procurement and delivery on demand where possible
  • Ensure all kitchen colleagues are aware of standards & expectations
  • Liaise daily with the Outlet Manager to keep open lines of communication regarding guest feedback
  • Establish, implement and control performance standards for the Stewarding Operation in the Kitchens, Restaurant and Bars, to achieve the highest possible hygiene standards, minimize operating equipment breakage and streamline efficient resource and equipment flows
  • Check the kitchens, stores and other food production facilities to ensure the highest possible hygiene and maintenance standards
  • Work together with the Food & Beverage Manager on daily basis and on all special events in the outlets as per the annual promotions calendar and develop food promotions if the situation requires
  • Control the food cost by reviewing and approving all store requisitions and direct purchases and minimize wastage
  • Review monthly forecasts and ensure that the department operational Budget is strictly adhered to
  • Ensure the cleanliness and maintenance of all work areas, utensils, and equipment
  • Follow kitchen policies, procedures and service standards
Qualifications& Experience

We expect the candidate to have a Diploma in Culinary/Kitchen Operations or Hospitality Management Degree and at least 4 years international experience in the capacity of Executive Chef at Luxury Hotels & Resorts. Preferred pre-opening experience, but not must.
Strong interpersonal and problem-solving abilities. Highly responsible & reliable. Ability to work well under pressure. Excellent communication skills - English, both written and verbal.
