Chef de Cuisine

We are looking for an ambitious and creative Chef de Cuisine at Nikki Beach Resort & SPA Montenegro.
Chef de cuisine is responsible to manage the culinary operation at our restaurant. In this position, you will oversee the preparation and presentation of a consistent quality food product that meets our guests’ expectation, take care of the company standards at the restaurant while maintaining training of team members.

Some of the tasks will include the following:
  • Managing all functions of the Food Production Areas in order to achieve the optimum profit and guest satisfaction.
  • Maintaining high standards of hygiene and sanitation as per HACCP international standards
  • Creating recipes and maintaining up-to-date and accurate costing for all dishes prepared
  • Developing and supporting the continuous improvement of the culinary team to ensure outstanding technical skills and product knowledge is maintained.
  • Maintaining comprehensive product knowledge including ingredients, equipment, vendors, markets, current trends and making appropriate adjustments to kitchen operations in a restaurant accordingly.
  • Continuously controlling and analyzing the level of the: sales, costs, food issuing, quality and presentation of food products, condition and cleanliness of facilities and equipment, guest satisfaction.
  • Developing popular menus offering
  • Determining with the Director of Operations the minimum and maximum stocks of all food, material and equipment.
  • Managing food costs, upholding menu standards and controlling inventory for the kitchens that are under your supervision
  • Directing administration and planning of the Culinary Operations needs to meet day-to-day expectations
An ideal candidate will have the following skills and experiences:
  • Good communication skills, both verbal and written.
  • Budgetary analysis capabilities 
  • Ability to physically self-demonstrate culinary techniques, i.e., cutting, cooking principles, plate presentation, safety and sanitation practices
Personal skills:
  • Displays emotional maturity and sensitivity in dealing with others.
  • Operates with integrity and objectivity at all times.
  • Creative and innovative style and approach
  • Strong leadership, supervisory, analytical and project management skills.
  • Experience with budgetary processes, cost control/revenue maximization.
  • Experience with Microsoft Office (Word and Excel are mandatory).
  • Understand and demonstrate customer service and works to build organizational goals.
Qualification Requirements:
  • At least a high school degree or equivalent education is a minimum qualification.  
  • University or college degree is preferred.
Experience:
  • At least 3 years of experience in luxury restaurants and must have experience in the overall management of restaurant culinary operations.
