We are looking for an ambitious and hardworking Food and Beverage Director at Nikki Beach Resort in Montenegro, Tivat Bay to join our team! In this position, you will take a lead in forecasting, planning and controlling the ordering of food and beverages. You will also be expected to lead your team by an example. Reporting to our General Manager.
Some of the tasks will cover the following:
- Managing food & beverage costs, upholding menu standards and controlling inventory
- Creating event-specific menus for occasions such as banquets, conventions and catered meetings.
- In addition to menu maintenance and event management, being involved with all of full-service hospitality establishments' day-to-day functions, includes associate management, guest interactions, office administration duties, vendor communications and labor costs.
- Overseeing the management of staff and may address issues that lower levels of management are unable to resolve.
- Ensuring that operational standards are met in regards to local sanitation regulations, food storage and loss prevention.
- Directing administration and planning of the Food and Beverage Department operations needs to meet day to day expectations.
- Regularly reviewing and evaluating the degree of customer acceptance of the services provided by the sub departments.
- Recommending to management new operating and marketing policies in consultation with Sales & Marketing when there is consistency in decline of sales that imply dissatisfaction by the customers, a material shift in the components of customer market, or any other changes in the competitive environment.
- Developing (with the aid of sub-department heads) operating tools necessary for budgeting, forecasting purchase specifications, recipes, portion specifications, menu abstracts, food production control, etc.
- Participating with the Executive Chef, Restaurant Managers, Beach Club Manager and any other parties concerned in the creation of attractive merchandising menus to attract a predetermined customer market.
- Implementing effective control of food, beverage and labor costs within the sub-departments
- Continuously evaluating the performance of the team and encouraging enhancement or development within the job function or in their career as a whole.
- Planning and administering a learning and development program within the department which will provide well-trained associates at all levels and permit advancement for those persons qualified and interested in career development.

Qualification Standards:
- At least a high school degree or equivalent education as a minimal qualification.
- University or college degree preferred.
- Experience:
- At least 5 years’ experience in the overall management of Food & Beverage operations of internationally acclaimed luxury hotels in the capacity of DOFB and must have some management experience in culinary and marketing. Local knowledge and pre-opening experience are a plus.
