We are looking for an ambitious, creative, dedicated Executive Chef responsible to manage all culinary operations at Nikki Beach Resort in Montenegro, Tivat Bay to join our team!
In this position, you will take care also for the company standards, associate training, and overseeing the preparation and presentation of a consistent quality food product which meets our guests’ expectations. You will also be expected to lead your team by an example. Reporting to our General Manager.

Some of the tasks will cover the following:
  • Managing all functions of the Food Production Areas in order to achieve the optimum departmental profit and guest satisfaction.
  • Maintaining high standards of Hygiene and sanitation as per HACCP international standards
  • Creating recipes and maintaining up to date and accurate costing for all dishes prepared and sold in the Food and Beverage operation to support financial goals.
  • Developing and supporting the continuous improvement of the culinary team to ensure outstanding technical skills and product knowledge is maintained.
  • Maintaining comprehensive product knowledge including ingredients, equipment, vendors, markets and current trends and make appropriate adjustments to kitchen operations accordingly.
  • Controlling and analyzing, on an on-going basis, the level of the following:
    • Sales
    • Costs
    • Issuing of food
    • Quality and presentation of food products
    • Condition and cleanliness of facilities and equipment
    • Guest satisfaction
  • Developing with the Director of Food & Beverage popular menus offering guests value for money in accordance with Nikki Beach Resort & Spa, guidelines.
  • Determining with the Director of Finance & Business Support the minimum and maximum stocks of all food, material and equipment.
  • Managing food costs, upholding menu standards and controlling inventory of all kitchens that are under my supervision.
  • Directing administration and planning of the Culinary Operations needs to meet day to day expectations
An ideal candidate will have the following personality traits, skills and experiences:
  • Requires good communication skills, both verbal and written.
  • Budgetary analysis capabilities required.
  • Ability to physically self-demonstrate culinary techniques, i.e., cutting, cooking principles, plate presentation, safety and sanitation practices
Personal skills:
  • Displays emotional maturity and sensitivity in dealing with others.
  • Operates with integrity and objectivity at all times.
  • Creative and innovative style and approach.
  • Strong leadership, supervisory, analytical, and project management skills.
  • Experience with budgetary processes; cost control/revenue maximization.
  • Experience with Microsoft Office (Word and Excel mandatory).
  • Understand and demonstrate customer service and works to build organizational goals.
Qualification Standards:
  • At least a high school degree or equivalent education as a minimal qualification. 
  • University or college degree preferred.
  • Experience:
  • At least 5 years’ experience of internationally acclaimed luxury hotels and must have experience in the overall management of culinary operations.
